Between 1.25 and 3.4 million people in the UK are affected by an eating disorder.*January is the month when we are bombarded from social media and advertising with diets and gym memberships but when does the dieting and excessive exercising become an issue? In this week’s podcast Jinty and Lou’s guest is Jackie Larner a 53 year old who has suffered with Anorexia Nervosa and addiction from a teenager. Jackie talks with honesty about how anorexia and subsequent addiction changed her from a socialable girl into an isolated teenager. As she is Jinty’s sister we get to hear how the family were affected by her illness. Most eating disorders develop during adolescence & our guest this week,Jackie, developed her eating disorder when she was just 13 years old. Jackie recounts her story, how it started, the long term damage to her body and her experiences, to where she is now, a 53 year old mum of 3 children who is just coming into her stride. Her eating disorder and alcoholism has not been an easy path, we find out how to spot the signs and ways of dealing with this disease as a family. This week we read from Lady Brenda Hale President of the Supreme Court from 2017-2020 all the way through to Nadia Murad a Noble Peace Prize Laureate, we find out a precious object that shapes the women’s lives and where they rose from to get them where they are today. This book overflows with extraordinary women. The Foodie this week continues are Veganuary theme and is a hearty filo and butternut squash pie from Lou, easy to make and full of goodness. Recipe below. The WI for the month of January is Veganuary, we find out how Lou is getting on and if she’s fallen off the vegan wagon or is embracing the vegan life. We are campaigning for better menopause care, specifically a Menopause Clinic, in Devon and Cornwall in the UK. We are gathering as many testimonies from women who have struggled to get the correct diagnosis and referrals. Together we can make change happen, whilst raising awareness along the way. Recipe: Lou’s Vegan Butternut Squash, Feta and spinach Filo PieIngredients:Filo pastryButternut squash, peeled and cubedSpinach1 onion, chopped2 cloves of garlic, finely choppedExtra virgin olive oil (EVO)Vegan feta cubedSmoked chilli harissa paste or rose harissaSalt and pepper Recipe:Place the butternut squash, onion and garlic into a roasting tin. In a separate bowl mix 2 tsps of harissa with a healthy glug of EVO mix and pour over the squash, onions and garlic and mix around until covered in the roasting tin. Put into a medium oven and roast for 20-40 mins until the butternut squash softens and slightly caramelises.Wilt the spinach in a pan flavour with salt and pepperOnce the roasting tin of squash is out of the oven let it cool for 10 minutes.Whilst cooling brush EVO into a deep pie dish coat the sheets of filo pastry in EVO with a pastry brush. Layer the bottom with 3-4 sheets.Layer in the roasted squash, onion and garlic with vegan feta and spinach until all ingredients used.
