Growing up with Type 1 Diabetes In this week’s podcast we talk to a woman who has grown up with Type 1 Diabetes, Daisy Hockings-Thompson, Lou’s daughter. Daisy talks to us about her diagnosis, the teenage years and how even before getting out of bed in the morning it affects her every-day life.We look at how hormones affect insulin when menstruating and during menopause. Our guest this week is a very special one, Daisy Hockings-Thompson is Lou’s daughter and a type 1 diabetic. Type 1 diabetes affects 8% of the population of the UK, it is caused when the body’s own immune system destroys cells within the pancreas and the pancreas stops producing a hormone called insulin which we need to give us energy. Daisy talks about her diagnosis at 10 years old and the troubled teenage years and the constant monitoring she has to do every day just to be able to get out of bed. We learn about hypos and hypers and the fatal consequence of both if left untreated. We talk about how hormones affect insulin levels during menstruation and during the menopause and we also learn about the huge financial divide for people that can afford the latest technologies and how even in the USA type 1 diabetics are dying because they cannot afford insulin.You can watch Daisy’s full interview on our Womenkind Collective YouTube channel, where you can also catch up with those 2Deb’n maids, Flotsam and Jetsom. Please do subscribe to our YouTube channel where you can see our 2 Deb’n maids and catch our latest interviews.YouTube channel: https://www.youtube.com/channel/UCFgmHLcdx28eco-XlkWYwUAIngredients•1tbsp ground chia seed•140g vegan block•100g dark muscovado sugar•3tbsp maple or golden syrup•350g plain flour, plus extra for dusting•1tsp bicarbonate of soda•1tbsp ground ginger•2tsp ground cinnamonMethod-•STEP 1Combine the chia seed with 2½ tbsp water, and leave to thicken for 5 mins. Line two baking sheets with baking parchment. Mix the vegan block, sugar, bicarb, spices and flour in a bowl with your hands and crumble until it resembles sand. Stir in the chia mix and syrup. Mix together until it comes together into a smooth dough. Who has time to chill it? I didn’t but you may, if so chill for 45 mins.
•STEP 2Heat the oven to 200C/180C fan/gas 6. Roll the dough out on a lightly floured surface to a 5mm thickness. Stamp out as many gingerbread people or Yogi’s, as you can, then re-roll the trimmings and continue until all the dough is used. Put on the sheets and bake for 12 mins until golden. Leave to cool on the sheets for 10 mins, then transfer to wire racks to cool completely.
